Pancit

Almost every culture has a favorite cabbage recipe. This is a cabbage dish from the Philippines. It’s called pancit. It’s a simple entrée made with cabbage and rice noodles. Rice noodles are wonderful in the summer. They don’t need boiling. You just have to soften them in some water. This is also a great dish for using up cooked chicken.
You can store the leftover pancit in an airtight container in the refrigerator for 3-4 days, and in the freezer for 3 months. Just thaw it in the refrigerator, reheat it, and serve.

Ingredients
  

  • 1 12- oz package of dried rice noodles
  • 1 tsp vegetable oil
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 2 cups diced cooked chicken breast meat
  • 1 small cabbage thinly sliced
  • 4 carrots thinly sliced
  • ¼ cup soy sauce
  • 2 lemons cut into wedges, for garnish
