It’s a simple entrée made with cabbage and rice noodles. Rice noodles are wonderful in the summer. They don’t need boiling. You just have to soften them in some water. This is also a great dish for using up cooked chicken.You can store the leftover pancit in an airtight container in the refrigerator for 3-4 days, and in the freezer for 3 months. Just thaw it in the refrigerator, reheat it, and serve.
