Ginger-soy-orange-sesame vinaigrette

This is a light, refreshing dressing, perfect for a summer salad. It will keep for a day in a tightly covered jar in the refrigerator.

Ingredients
  

  • cup sesame oil
  • cup rice wine vinegar
  • cup soy sauce
  • 2 TBS sugar
  • 2 TBS grated ginger
  • ¼ cup orange juice
  • Orange zest optional
  • 2 TBS tahini paste
  • 2 tsp minced fresh chile pepper of your choice or less if you don’t want it spicy
  • Salt and freshly ground white pepper to taste

Instructions
 

  • Combine the ingredients in a small jar with a tight cover and shake vigorously until they’re combined. Or put them in a bowl and whisk together.
