Ginger-soy-orange-sesame vinaigrette

This is a light, refreshing dressing, perfect for a summer salad. It will keep for a day in a tightly covered jar in the refrigerator.

rice wine vinegar

grated ginger

orange juice
Orange zest
optional

tahini paste

minced fresh chile pepper of your choice
or less if you don’t want it spicy
Salt and freshly ground white pepper to taste
Instructions
Combine the ingredients in a small jar with a tight cover and shake vigorously until they’re combined. Or put them in a bowl and whisk together.
