Beet ketchup

Who said that ketchup must be made with tomatoes? Try this beet-based version and let your imagination run wild with combinations of vegetables and sweets, spices, vinegars, and herbs, pureed until smooth. If you come up with a memorable result, let us know and we’ll share it.

  • 1 lb cooked red beets diced
  • 1 cup apple cider vinegar
  • ½ cup brown sugar
  • ¼ cup diced onion
  • ½ tsp salt
  • ¼ tsp ground coriander
  • ¼ tsp ground cloves
  • Freshly ground black pepper to taste

This recipe calls for pre-cooked beets. If you don’t have those on hand, add cooking time for beets.
