Baked Rhubarb Side Dish

This is a great dish if you have a lot of rhubarb, or scale it down to use what you have.

Ingredients
  

  • 1 lb rhubarb, trimmed and diced
  • 1 ½ cups sugar
  • ¼ to ½ tsp ginger, cinnamon, and/or nutmeg, optional, to taste
  • ¾ cups orange, apple, or pineapple juice

Instructions
 

  • Combine rhubarb, sugar, and spices in a bowl and spread out on a greased baking dish. Bake at 350 for about 20 minutes.
  • Remove from oven. Add the juice, and return to the oven for another 20 minutes.
