Ingredients

rhubarb, trimmed and diced
1 ½
cups
sugar
¼ to ½
tsp
ginger, cinnamon, and/or nutmeg,
optional, to taste
¾
cups
orange, apple, or pineapple juice
Instructions
Combine rhubarb, sugar, and spices in a bowl and spread out on a greased baking dish. Bake at 350 for about 20 minutes.
Remove from oven. Add the juice, and return to the oven for another 20 minutes.
