Baked Rhubarb Side Dish

Ingredients
- 1 lb rhubarb, trimmed and diced
- 1 ½ cups sugar
- ¼ to ½ tsp ginger, cinnamon, and/or nutmeg, optional, to taste
- ¾ cups orange, apple, or pineapple juice
Instructions
- Combine rhubarb, sugar, and spices in a bowl and spread out on a greased baking dish. Bake at 350 for about 20 minutes.
- Remove from oven. Add the juice, and return to the oven for another 20 minutes.
