Orange-beet-berry smoothie
From Lori, Yorkville CSAIf you have leftover roasted beets, here’s a refreshing, nutritious way to use them. Any fruit can be added—melon, peaches, apples have all found their way into my beet smoothies.

Ingredients
- 2 cups plain yogurt
- ½ cup orange juice
- 4-8 oz roasted peeled beets
- ½ cup blueberries or any other berry
- 1 tsp fresh ginger
- 1 tsp brown sugar or honey optional
Instructions
- Put everything into a large blender and whirl until smooth.
- Serve cold.
