Orange-beet-berry smoothie

If you have leftover roasted beets, here’s a refreshing, nutritious way to use them. Any fruit can be added—melon, peaches, apples have all found their way into my beet smoothies.

Equipment

  •  Blender

Ingredients
  

  • 2 cups plain yogurt
  • ½ cup orange juice
  • 4-8 oz roasted peeled beets
  • ½ cup blueberries or any other berry
  • 1 tsp fresh ginger
  • 1 tsp brown sugar or honey optional

Instructions
 

  • Put everything into a large blender and whirl until smooth.
  • Serve cold.

Extra time needed for roasting beets
