Kohlrabi carrot apple slaw

Ingredients
  

  • 2 medium kohlrabi bulbs peeled
  • 1 apple cored and peeled
  • 2 medium carrots peeled
  • 2 TBS olive oil
  • Zest and juice from 1 lemon
  • ¼ cup raisins
  • 2 TBS chopped fresh cilantro
  • 1 tsp sea salt
  • pepper to taste

Instructions
 

  • Shred the kohlrabi, apple, and carrots, then placeinto a large bowl.
  • In a medium bowl, combine olive oil, lemon zest and juice, raisins, cilantro, salt, and pepper.
  • Gently toss with the shredded kohlrabi, appleand carrots until evenly mixed.

Variations

  • Apple cider vinegar can be substituted for thelemon juice.
  • Try using one green and one purple kohlrabi for variety.

Yummy! Made just as described and only took one bite so far. Amazing. Kohlrabi acts like Jicama in a slaw… it adds a bit of extra juicy crunch!
