apple
cored and peeled

Zest and juice from 1 lemon

raisins

to taste
Instructions
Shred the kohlrabi, apple, and carrots, then placeinto a large bowl.
In a medium bowl, combine olive oil, lemon zest and juice, raisins, cilantro, salt, and pepper.
Gently toss with the shredded kohlrabi, appleand carrots until evenly mixed.
Variations
Apple cider vinegar can be substituted for thelemon juice.
Try using one green and one purple kohlrabi for variety.
