Ingredients
- ½ cup olive or canola oil
- 2 cups carrots sliced (2 cups sliced is about 4 medium carrots)
- 1 medium onion chopped
- 2-3 tsp minced garlic
- 1 tsp curry powder or turmeric
- 1 tsp cumin
- 1 ½ tsp smoked paprika
- 1 large tomato diced
- 1 lb potatoes cut in chunks
- 1 bell pepper chopped
- 8 cups chopped cabbage 8 cups is about ½ cabbage head
- ½ tsp cayenne pepper or more to taste optional
- salt and pepper to taste
