Daikon radish salad

This is a wonderful daikon radish salad that you can make ahead of time. It is simple and really delicious. Hope you enjoy it!

Equipment

  • Julienne peeler (optional)

Ingredients
  

  • ½ lb daikon radish
  • 1 ½ tsp sugar
  • 1 ½ tsp Korean red pepper powder
  • ½ tsp salt
  • 1 scallion thinly sliced
  • 1 clove garlic, minced
  • 2 tsp white vinegar

Instructions
 

  • Peel the daikon radishes and cut them into matchsticks.
  • Toss the radishes with red pepper powder, sugar, salt, green onion, and garlic.
  • Sprinkle the mixture with vinegar and mix well.
  • Adjust the flavorings to taste, adding additional salt, sugar or vinegar, if needed.
  • Refrigerate until ready to serve.

Notes

Tip: You can use a julienne peeler to cut the daikon radish into matchsticks.
