Cuban Mojo Dressing

Mojo is a Caribbean sauce that is full of strong tastes; it varies from island to island but usually includes garlic, citrus, and herbs. It goes well with Mexican and other Latin American dishes and salads.

Ingredients
  

  • cup olive oil
  • 5 chopped garlic cloves or 2 chopped garlic scapes
  • ¼ cup orange juice
  • 2 TBS lime juice
  • ½ tsp ground cumin
  • ½ tsp kosher salt
  • ¼ cup chopped cilantro parsley, or a combination
  • Hot sauce or jalapeno to taste

Instructions
 

  • Heat a pan on medium heat and add the oil. Add the chopped garlic or scapes and toss for about 45 seconds, until slightly soft. Allow to cool slightly.
  • Add the garlic to a small food processor with the rest of the ingredients and pulse to combine.
  • Taste and adjust salt and hot sauce.
