Chimichurri

Chimichurri is a spicy, herby sauce used in South America to baste chicken or beef while grilling or barbecuing. It can also be used as a marinade or as a sauce over steaks, chicken, fish, or vegetables.

Ingredients
  

  • ½ cup olive oil
  • 2 TBS red wine vinegar
  • ½ cup finely chopped parsley
  • 3-4 garlic cloves, finely chopped or minced
  • 2 small red chilies, or 1 larger red chili, deseeded and finely chopped (about 1 TBS finely chopped chili)
  • 2 tsp chopped fresh oregano or ½ tsp dried oregano
  • 1 tsp coarse salt
  • Freshly ground black pepper, to taste (about ½ tsp)
