Beet fries with harissa

These beet “fries” are delicious, healthy, and satisfying. Harissa pairs well with beets’ earthiness. Great with Greek yogurt or your favorite dipping sauce. A wonderful way to introduce beets to little ones (and beet-averse adults).

  • 2 large red or golden beets
  • 1 TBS olive oil
  • 1 tsp harissa seasoning
  • ¼ tsp cumin
  • salt and pepper
  • parsley chopped (optional)
  • 2 TBS Parmesan cheese grated
