Beet and sweet potato fries

These oven-baked root veggies make a standout side dish with a lovely peppercorn dipping sauce—though they also go well with ketchup. Easy to prepare, colorful, delicious, and healthier than French fries. If pink and green peppercorns are difficult to come by, you can use a little crushed red pepper, aleppo or marash pepper, urfa biber, or your favorite peppery mixed blend.

Ingredients
  

  • ½ cup reduced-fat mayonnaise
  • 1 tsp pink peppercorns crushed
  • ½ tsp green peppercorns crushed
  • ½ tsp coarsely ground pepper divided
  • 1 large sweet potato about 1 lb
  • 2 TBS olive oil divided
  • ½ tsp sea salt divided
  • 2 large fresh beets about 1 lb
