- 4 sturdy romaine leaves
- 1 cup cooked black beans or black-eyed peas
- 1 small red pepper chopped fine
- 1 small cucumber chopped fine
- 1 carrot shredded

Instructions
- Wash and dry the romaine leaves.
- Combine the rest of the ingredients; pile the filling on the romaine leave.
