Kohlrabi carrot apple slaw

Ingredients
- 2 medium kohlrabi bulbs peeled
- 1 apple cored and peeled
- 2 medium carrots peeled
- 2 TBS olive oil
- Zest and juice from 1 lemon
- ¼ cup raisins
- 2 TBS chopped fresh cilantro
- 1 tsp sea salt
- pepper to taste
Instructions
- Shred the kohlrabi, apple, and carrots, then placeinto a large bowl.
- In a medium bowl, combine olive oil, lemon zest and juice, raisins, cilantro, salt, and pepper.
- Gently toss with the shredded kohlrabi, appleand carrots until evenly mixed.
Variations
- Apple cider vinegar can be substituted for thelemon juice.
- Try using one green and one purple kohlrabi for variety.
