Sugar snap peas with garlic and panko

Early July sees one of our most popular vegetables – sugar snap peas, so delicious, they don’t always make it into a recipe at our house. We just pull the strings and eat them. If you are up for cooking them, here’s a tasty recipe with garlic, panko bread crumbs, and parmesan cheese.

Ingredients
  

  • ½ lb sugar snap peas washed, dried and trimmed
  • ¼ cup panko bread crumbs
  • ¼ cup grated parmesan cheese
  • 1 TBS grated garlic dried minced garlic, or chopped fresh garlic
  • 3 TBS olive oil or olive oil infused with your favorite herbs widely available in supermarkets and groceries

Instructions
 

  • Preheat the oven to 350 F.
  • Mix the panko crumbs, the parmesan cheese and the garlic.
  • Toss the sugar snap peas with the olive oil.
  • Toss the snap pea mixture with the bread crumb mixture.
  • Spread on a baking sheet and roast for 15 – 20 minutes.

Notes

Tip: You may want to use a sheet of parchment paper to line the baking sheet. It will make cleanup much easier.
