Rhubarb, Radish, And Green Onion Salad with Lemon-Honey Dressing

Ingredients
For the dressing:
- 1/4 cup olive oil
- ½ cup rice wine vinegar
- 1 TBS honey
- 1 TBS freshly squeezed lemon juice
- Salt and pepper to taste
For the salad:
- 2 stalks rhubarb, trimmed and diced (about 4 oz)
- 1 small bunch radishes, cut into matchsticks
- 1 scallion sliced into rings (white part and about an inch of green)
- 4 cups torn greens, such as lettuce, arugula, or mizuna
Instructions
- Mix the dressing ingredients in a small jar with a tight lid. Shake vigorously until combined.
- Mix the salad ingredients in a medium bowl. Pour the dressing over the salad and toss to coat. Chill and serve cold.
