Rhubarb, Radish, And Green Onion Salad with Lemon-Honey Dressing

This light salad uses several ingredients that we usually receive in our first CSA delivery. Most of the herbs we receive will also work well in this salad.

Ingredients
  

For the dressing:

  • 1/4 cup olive oil
  • ½ cup rice wine vinegar
  • 1 TBS honey
  • 1 TBS freshly squeezed lemon juice
  • Salt and pepper to taste

For the salad:

  • 2 stalks rhubarb, trimmed and diced (about 4 oz)
  • 1 small bunch radishes, cut into matchsticks
  • 1 scallion sliced into rings (white part and about an inch of green)
  • 4 cups torn greens, such as lettuce, arugula, or mizuna

Instructions
 

  • Mix the dressing ingredients in a small jar with a tight lid. Shake vigorously until combined.
  • Mix the salad ingredients in a medium bowl. Pour the dressing over the salad and toss to coat. Chill and serve cold.
