Mango dressing

This makes about ½ to ¾ cups of dressing, but because it is so sweet you’ll need only about a tablespoon or two for each salad.

Ingredients
  

  • 1 large mango
  • 1 TBS red wine or champagne vinegar
  • 1 TBS light vegetable oil
  • 1 TBS honey
  • 1 TBS lemon juice
  • ½ tsp cinnamon

Instructions
 

  • Peel the mango, cut it into pieces, and puree until smooth in food processor.
  • Add other ingredients to the food processor bowl and pulse to combine. You can add other herbs and spices, such as sumac, nutmeg, star anise, or thyme if desired.
