Buttermilk dressing

A low-calorie way to dress a salad, since buttermilk is much lower in fat than oil or mayo. Change it up by varying the herbs and adding spices

Ingredients
  

  • ¾ cup buttermilk
  • ¼ cup grated cucumber
  • 2 TBS finely chopped scallion
  • 1 TBS Dijon mustard
  • 1 TBS finely chopped dill or other herbs
  • 2 tsp lemon juice
  • ¼ tsp salt
  • ¼ tsp ground black pepper

Instructions
 

  • Combine all the ingredients in a small jar and close lid tightly. Shake well.
