- If you have leftover lettuce, chop it roughly—or pulse it for just two seconds in a food processor.
- Add your favorite dressing and some other vegetables for crunch—grated carrots or celery, sunflower seeds, bits of bell peppers or cooked beets, apples, pecans).
- Spread it on bread and serve it open-faced or topped with another slice of bread.
