Kale chips

These chips are crispy, healthy, easy to make, and pack lots of flavor. They’re a great solution for the kale fatigue some of us begin to feel in the weeks when kale fills our CSA boxes.

  • Silicone baking mat or parchment paper

Ingredients
  

  • 1 bunch kale
  • 1 TBS olive oil
  • 1 TBS fresh lemon juice
  • 1 tsp grated lemon zest
  • 2 TBS ground walnuts
  • 1 tsp paprika
  • 1 TBS soy sauce
  • 3 TBS nutritional yeast
  • ½ tsp granulated garlic
  • salt & pepper to taste

Instructions
 

  • Preheat the oven to 325 to 350 F, depending on your oven. There are many variables that affect an oven’s efficiency (such as airflow, seal, age, etc.), and the kale chips cook rather quickly and can burn fast, so if you aren’t sure we recommend starting on the cooler end at 325 F.
  • Line a sheet pan with a silicone baking mat or parchment paper.
  • To prepare the kale, strip the stems from the leaves and tear the leaves into large bite-size pieces. The kale will shrink a lot as it bakes. Place the kale into a large bowl.
  • Massage the kale with olive oil using your hands for about a minute, until the kale is softened, deep green, and somewhat translucent.
  • In a separate bowl, combine the remaining ingredients to form a sort of dry paste.
  • Sprinkle the seasoning paste over the kale, and toss lightly in the bowl to make sure the leaves are evenly coated with the seasoning.
  • Arrange the kale on the lined sheet pan, in a single layer. Bake for 15-20 minutes, until crispy and lightly browned but not bunt. Let cool before serving. The kale chips will continue to crisp a little as they cool.

Notes

This recipe is very versatile. Feel free to play around with different flavors and textures. Our favorite variations include:
• Sesame kale chips: Add 1 TBS sesame seeds right to the seasoning paste.
• Everything bagel kale chips: Add 2 TBS everything bagel seasoning to the seasoning paste. Check if your seasoning contains salt, and use less or no salt, as needed.
