- 4 cups callaloo or amaranth leaves chopped and tightly packed
- 1 TBS olive or coconut oil
- 1 small onion chopped
- 2 cloves garlic minced
- 2 scallions chopped
- 2 sprigs thyme
- medium tomato chopped
- Salt to taste
- 1 scotch bonnet pepper whole, or ¼ tsp cayenne pepper
- 2 TBS water
