Ingredients
- 2 TBS vegetable oil
- 1 large onion sliced into rounds and separated into rings
- 1 tsp sugar
- 8 cups frisée leaves washed and torn into pieces
- 1 large apple cut into chunks
- 1 cup feta cheese
- ½ cup garlic scape pesto see recipe here
Instructions
- Heat the vegetable oil in a small skillet. Add the onions and sauté until soft. Add the sugar and keep tossing until the onions are very soft and brown. Set aside and allow to cool slightly.
- Put the frisée in a large bowl. Add the apple chunks and crumble in the feta. Add the cooled onions and toss again.
- Divide onto plates and top with pesto.
