Frisée salad with caramelized onions, apples, and feta cheese with garlic scape pesto

Lots of strong flavors here: bitter greens, salty feta, garlic—plus some sweetness in the caramelized onions and apples to tone them down.

Ingredients
  

  • 2 TBS vegetable oil
  • 1 large onion sliced into rounds and separated into rings
  • 1 tsp sugar
  • 8 cups frisée leaves washed and torn into pieces
  • 1 large apple cut into chunks
  • 1 cup feta cheese
  • ½ cup garlic scape pesto see recipe here

Instructions
 

  • Heat the vegetable oil in a small skillet. Add the onions and sauté until soft. Add the sugar and keep tossing until the onions are very soft and brown. Set aside and allow to cool slightly.
  • Put the frisée in a large bowl. Add the apple chunks and crumble in the feta. Add the cooled onions and toss again.
  • Divide onto plates and top with pesto.
