Asian kohlrabi cabbage carrot slaw

If you’re looking for a recipe that uses kohlrabi aswell as cabbage—we often get them in the same share—here’s a great one. TheAsian-flavored dressing includes miso paste which can be found in Asiangroceries. Miso, which is made from fermented soybeans, add great flavor andnutrition—protein and probiotics—wherever it’s used.

Ingredients
  

  • 2 kohlrabi about 8 oz total, shredded or cut into matchstick size
  • 2 cups cabbage shredded
  • 3 large carrots grated or shredded

For the dressing

  • 1 shallot or the green part of two scallions chopped
  • 1 TBS grated ginger
  • 2 TBS miso paste
  • 2 TBS vegetable oil
  • 2 TBS rice vinegar
  • 1 TBS soy sauce or Tamari
  • 1 tsp toasted sesame

Instructions
 

  • Put the kohlrabi, cabbage, and carrots into a large bowl and mix to distribute them evenly.
  • Put all the dressing ingredients into a small jar with a tight lid and shake vigorously to combine. Or put the ingredients in a small bowl and whisk.
  • Pour the dressing into the bowl with the shredded vegetables and toss well to coat. Sprinkle the sesame seeds over the top.
