Asian kohlrabi cabbage carrot slaw

TheAsian-flavored dressing includes miso paste which can be found in Asiangroceries. Miso, which is made from fermented soybeans, add great flavor andnutrition—protein and probiotics—wherever it’s used.

Ingredients
- 2 kohlrabi about 8 oz total, shredded or cut into matchstick size
- 2 cups cabbage shredded
- 3 large carrots grated or shredded
For the dressing
- 1 shallot or the green part of two scallions chopped
- 1 TBS grated ginger
- 2 TBS miso paste
- 2 TBS vegetable oil
- 2 TBS rice vinegar
- 1 TBS soy sauce or Tamari
- 1 tsp toasted sesame
Instructions
- Put the kohlrabi, cabbage, and carrots into a large bowl and mix to distribute them evenly.
- Put all the dressing ingredients into a small jar with a tight lid and shake vigorously to combine. Or put the ingredients in a small bowl and whisk.
- Pour the dressing into the bowl with the shredded vegetables and toss well to coat. Sprinkle the sesame seeds over the top.
