Vietnamese lettuce wraps

Ingredients
  

For the dressing

  • ½ cup white vinegar
  • 2 TBS sugar
  • tsp salt
  • 2 medium carrots julienned
  • ½ medium onion cut into thin slices

For the filling

  • ½ lb ground pork chicken, or turkey
  • 1 TBS minced fresh gingerroot
  • 1 garlic clove minced
  • 1 TBS reduced-sodium soy sauce
  • 1 TBS mirin
  • ¼ tsp pepper
  • 1 tsp fish sauce optional

Assembly

  • 8 Bibb lettuce leaves
  • ½ small cucumber finely chopped
  • ½ small sweet pepper finely chopped
  • 1 scallion chopped
  • 1 TBS each coarsely chopped fresh basil cilantro, and mint
  • 1 jalapeno pepper seeded and finely chopped
  • 2 TBS salted peanuts chopped
  • Hoisin sauce
  • lime wedges for serving
