Ingredients
  

  • 4 sturdy romaine leaves
  • 1 cup cooked black beans or black-eyed peas
  • 1 small red pepper chopped fine
  • 1 small cucumber chopped fine
  • 1 carrot shredded
  • Your favorite salad dressing

Instructions
 

  • Wash and dry the romaine leaves.
  • Combine the rest of the ingredients; pile the filling on the romaine leave.
