Chef salad

Here’s your chance to use up a lot of leftovers and a lot of lettuce.

Ingredients
  

  • 5 cups lettuce washed and torn into bite-sized pieces
  • ½ cup cherry tomatoes halved, or 1 large tomato, sliced
  • 8 oz meat a combination of whatever you have on hand, slivered: bacon, chicken, turkey, beef, sausage, etc.
  • 1 cup of your favorite dressing; creamy dressings such as ranch and buttermilk work well
  • 1 avocado cut into chunks
  • 2 hard-boiled eggs quartered
  • ½ cup croutons

Instructions
 

  • Line a large bowl with half the lettuce.
  • Toss the rest of the lettuce and the tomato and meat with the salad dressing, then add to the bowl.
  • Arrange the avocado and eggs on top. Sprinkle with croutons.
  • Serve cold or at room temperature.
