  • 3 TBS coarsely chopped fresh lemon thyme, plus small sprigs for garnish

  • 1 tsp sugar
  • 3 TBS old unsalted butter, cut into pieces
  • 1 cup heavy cream
  • 1 large egg white, lightly beaten
