Garlic scape pesto

This recipe is very flexible. If you want a more pesto-like texture, increase the olive oil and don’t use the yogurt, sour cream, or mayo. The yogurt, sour cream or mayo make it thicker and creamy. Walnuts can be replaced by any nut, or you can get rid of the nuts all together. It's still delicious!

Ingredients
  

  • 4-6 garlic scapes
  • ½ cup Parmesan cheese
  • cup toasted walnuts or pine nuts
  • 2 TBS olive oil
  • 2 TBS Greek yogurt or sour cream or mayonnaise
  • Salt to taste

Instructions
 

  • Trim the top of the garlic scapes, place in a food processor (or chop very fine).
  • Add Parmesan cheese, walnuts, olive oil and Greek yogurt. Blend until all incorporated. Add salt to taste

Notes

Variations: For a more pesto-like texture, use more olive oil and omit the Greek yogurt, sour cream, and mayo. Walnuts can be replaced by any nut, or you can omit them altogether. It’s still delicious!
