Caesar salad with creamy yogurt dressing

Ingredients
- 1 TBS balsamic vinegar
- 1 TBS lemon juice
- 1 TBS Dijon mustard
- 1 garlic clove skinned and crushed
- 1 TBS capers drained and finely chopped
- ¼ cup freshly grated reggiano or grana padano parmesan
- 5 TBS extra virgin olive oil
- ⅛ tsp sea salt
- 1 TBS Greek yogurt
- freshly ground pepper to taste
- 1 head romaine lettuce
- Toasted croutons
Instructions
- Whisk all ingredients except for the lettuce and croutons together for dressing and set aside.
- Clean and cut Romaine lettuce.
- Drizzle with dressing.
- Add croutons.
- Toss and serve.
