Beet and sweet potato fries

Easy to prepare, colorful, delicious, and healthier than French fries. If pink and green peppercorns are difficult to come by, you can use a little crushed red pepper, aleppo or marash pepper, urfa biber, or your favorite peppery mixed blend.

- 2 large fresh beets about 1 lb
