Ingredients
  

For the cake:

  • 1 lb beets about 2 medium
  • cup granulated sugar
  • cup packed dark brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup 1% low-fat milk

For the frosting:

  • 2 tsp grated orange rind
  • 1 tsp vanilla extract
  • 1 8-oz block ⅓-less-fat cream cheese, chilled
  • 3 cups sifted powdered sugar
  • 2 TBS finely chopped walnuts toasted
