For the cake:
- 1 lb beets about 2 medium
- ⅔ cup granulated sugar
- ⅔ cup packed dark brown sugar
- ½ cup vegetable oil
- 2 large eggs
- 2 ½ cups all-purpose flour
- 2 tsp baking powder
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup 1% low-fat milk
For the frosting:
- 2 tsp grated orange rind
- 1 tsp vanilla extract
- 1 8-oz block ⅓-less-fat cream cheese, chilled
- 3 cups sifted powdered sugar
- 2 TBS finely chopped walnuts toasted
