a fewradishes, greens trimmed and reserved for another dish
sea salt & pepper
optional: Parmesan cheese
Instructions
Cut bread into ¼ inch slices, then toast them. When the slices have cooled, butter them.
Scrub and slice a few unpeeled radishes, making them as close to paper-thin as you can (using a mandoline, if possible).
For a beautiful presentation, cut bread into canapé-sized pieces (triangles are nice), then arrange a few slices of radish on top.
Sprinkle with salt, pepper, and some grated Parmesan if you wish.
Notes
Variations:
You can use aioli, crème fraîche, or herbed mayonnaise in place of butter.
Make it a more substantial meal by layering egg salad, chicken salad, tuna salad, or thinly-sliced roast beef on top. The radishes will add some delicious crunch and tang.
