Kohlrabi fritters

Ingredients
  

  • 1 large kohlrabi about 8 oz, peeled
  • 1 large egg
  • ½ cup breadcrumbs or matzoh meal
  • Salt and pepper to taste
  • 1 TBS of your favorite herbs or 1 tsp of your favorite spice
  • 2 TBS mild-flavored oil

Instructions
 

  • Grate the kohlrabi by hand or in a small food processor; you can choose to grate it fine or leave a bit chunky.
  • Add the rest of the ingredients. Taste the batter (remember that there is raw egg in it) and adjust seasonings.
  • Heat the oil on a griddle, drop the batter in 1-tablespoons mounds, then flatten. Fry until crispy, about 2 minutes, then flip and fry the other side.
