Caesar salad with creamy yogurt dressing

Ingredients
  

  • 1 TBS balsamic vinegar
  • 1 TBS lemon juice
  • 1 TBS Dijon mustard
  • 1 garlic clove skinned and crushed
  • 1 TBS capers drained and finely chopped
  • ¼ cup freshly grated reggiano or grana padano parmesan
  • 5 TBS extra virgin olive oil
  • tsp sea salt
  • 1 TBS Greek yogurt
  • freshly ground pepper to taste
  • 1 head romaine lettuce
  • Toasted croutons

Instructions
 

  • Whisk all ingredients except for the lettuce and croutons together for dressing and set aside.
  • Clean and cut Romaine lettuce.
  • Drizzle with dressing.
  • Add croutons.
  • Toss and serve.
