Ingredients

  • 1 tsp olive oil
  • 1 cup pecans chopped
  • 6 cups arugula or arugula mixed with other salad greens
  • 2 apples peeled (or not) and cut into slices or chunks
  • 4 oz cheddar cheese in ½-inch cubes

For the dressing

  • 1 TBS honey
  • 2 TBS sesame oil toasted oil if you can get it
  • 1 TBS Dijon mustard
  • 1 TBS red wine vinegar

Instructions
 

  • Spread or spray the oil on a frying pan. Heat gently, then add the pecans and toss quickly until they are toasted. Remove them from the flame as soon as they begin to darken—it takes just a few seconds for them to burn. Allow to cool.
  • While the pecans cool, whisk all the dressing ingredients in a small bowl.
  • Divide the salad greens into two bowls. Add the sliced apples, cheddar, and ½ the pecans to each. Drizzle dressing over the salad. Toss lightly.
